Shakshouka - Microwave Monday

When I was in Israel a few years back, I fell in love with the food. It was so fresh, so happy, and so natural. One dinner, in particular, I went with my host family to a restaurant in Tel Aviv and ordered the Shakshouka. My life had changed! After trial and error of trying to figure out how to poach an egg in tomato sauce in a microwave, I finally did it. I hope you enjoy this recipe!

Ingredients:

  • 1T onion diced

  • 1/2T garlic clove minced

  • 1 teaspoon olive oil

  • 1/8th cup bell pepper diced

  • 1/8th cup tomato diced

  • 1/2 cup tomato sauce

  • 1 egg

Procedure:

  1. Mix the oil, onion, and garlic in a mug. Microwave for 30 seconds.

  2. Add the bell pepper and the tomato. Mix and microwave for another 30 seconds.

  3. Pour in tomato sauce. Mix and microwave for 60 seconds covered with a plate as a lid

  4. Crack an egg and put in the tomato sauce. Cover with the plate and microwave for 90 seconds.

  5. Cool for a minute and serve
