Shakshouka - Microwave Monday
When I was in Israel a few years back, I fell in love with the food. It was so fresh, so happy, and so natural. One dinner, in particular, I went with my host family to a restaurant in Tel Aviv and ordered the Shakshouka. My life had changed! After trial and error of trying to figure out how to poach an egg in tomato sauce in a microwave, I finally did it. I hope you enjoy this recipe!
Ingredients:
1T onion diced
1/2T garlic clove minced
1 teaspoon olive oil
1/8th cup bell pepper diced
1/8th cup tomato diced
1/2 cup tomato sauce
1 egg
Procedure:
Mix the oil, onion, and garlic in a mug. Microwave for 30 seconds.
Add the bell pepper and the tomato. Mix and microwave for another 30 seconds.
Pour in tomato sauce. Mix and microwave for 60 seconds covered with a plate as a lid
Crack an egg and put in the tomato sauce. Cover with the plate and microwave for 90 seconds.
Cool for a minute and serve
