Personal Cheesecake - Microwave Monday

For the past few weeks, I have been craving Cheesecake. In my dorm room, I used to make cheesecake since cheesecake delivery cost too much for a college budget. Here is the recipe I use for my personal microwave cheesecake! (Also, is Cheesecake more of a cake or a pie? You tell me!)

Ingredients:

  • 1T Butter

  • 1 Graham Cracker Slice

  • 1 Egg Yolk

  • 2 oz Cream Cheese

  • 2T sugar

  • 1 scoop your favorite jam or jelly.

Procedure:

  1. Microwave butter in a ramekin for 20 seconds or until fully melted. Rotate the ramekin to coat each side with the butter.

  2. Crush the graham cracker slice by hand and mix in with the melted butter in the ramekin. Crush out bigger chunks. Flatten at the bottom of the ramekin.

  3. In a separate bowl, mix the egg yolk, cream cheese, and sugar together until smooth. Pour over the graham cracker mixture in the ramekin.

  4. Microwave on half power for 2 minutes.

  5. Take out and rotate a knife around the edges to separate the ramekin from the cheesecake. Put back in the microwave and cook on half power for an additional 1 minute.

  6. Cool in the refrigerator for at least 10 minutes. Pull out and top with jam or jelly.
