Butterscotch
Do you know that feeling when its the middle of the night and you just have a craving for ice cream? Well, what if that craving is for more… its for an ice cream sundae. Well, that’s what this recipe is for.
I created this recipe while in my college dorm room iun the middle of the COVID-19 pandemic so I could enjoy fresh butterscotch on my ice cream using only my microwave as a heat source. And, it only took two minutes so it didn’t distract from the homework I was totally 100% doing.
Time to cook: 2 minutes
Ingredients:
¼ cup Brown Sugar
2 Tablespoons Butter
3 Tablespoons Water
Equipment:
Microwave
Small bowl
Whisk
Steps:
Mix the brown sugar with just enough water to dissolve in the bowl.
Microwave for 60-90 seconds or juist until the mixture is at a slow paced boil with a deep caramel color.
While still hot, whisk the butter into the melted sugar mixture until combined and smooth.
Drizzle over your favorite ice cream and enjoy with your latest binge show.
Tips: If you swap the brown sugar for a granulated sugar you get caramel. Actually, while we are talking about this:
Caramel: White granulated sugar
Butterscotch: Brown sugar, butter is added at soft crack stage
Toffee: Brown sugar, butter is added at hard crack stage
Dulce de Leche: Made from milk where the sugars in the milk are caramelized.
